A breakfast kind of day

So, last night my friend Keith made us the most incredible dinner ever….

He comes from a long line of italians who looove to cook, and has grown up on homemade pasta. So, as this didn’t seem like a huge deal to him, my jaw was practically dropped to the floor the entire time I watched his beautiful pasta making in progress. It was as delicious as it looks! And definitely makes me want to attempt my own at some point. Image

Training Day 2: when I hopped on the treadmill this morning I did not think there was ANY way I’d be able to run 3 miles… I was feeling tired and unmotivated, but once I started going I quickly got into a grove and kept going with it. Although I was a little bit slower today than yesterday, Im still just proud I kept going!

I followed my run with 15 minutes on the elliptical and a 7 minute circuit found on a new app I just downloaded called 7-minute workout! It’s a great one! It runs you through a series of 12 exercises, 30 seconds each. Its nice because you aren’t stuck doing the same thing for too long. Which if you’re anything like me, is very important. I get so bored so easily! So this workout was fabulous.

I headed off to work, coming back home around 12:30 to eat lunch. Yes, this photo is of my lunch, not breakfast. Do you ever have days where you just crave certain things? Well, lately it has been cinnamon life. I am a huge cereal lover, and sometimes you just gotta listen to your body. So, breakfast for lunch it was!

When I got home from work I was starving. I wanted something fast, easy and healthy…sooo…what do you know?! Breakfast again! I love brinner. So much. I scrambled up some egg whites & spinach, with a side of some carrots, celery & hummus. For a sweet treat I concocted together a sweet greek yogurt dip and dipped apple slices & strawberries in it. Yum!! Then obviously I mayyy have just had to have half a slice of the banana bread I made this weekend 🙂 It all hit the spot.

Greek Yogurt dip:

  • vanilla greek yogurt
  • cinnamon
  • peanut butter
  • vanilla
  • honey

Skinny Buffalo Chicken Sandwich

Workout: Today started bright n early with a trip to the gym. I hopped on the treadmill for my favorite: interval running. I shifted between speeds and inclines for about 25 minutes. Something about changing the pace really keeps me going! Then I finished up with 20 minutes on the elliptical.

Healthy and easy: my 2 favorite words when it comes to dinner time. It’s easy to get sucked into the appeal and convenience of fast food after a long day of work, but stay far away! There are plenty healthier options out there. I know after work the last thing I want to do is prep a meal and wait for it to cook for a few hours so I try to find quick meals that I know aren’t bad for me! I try to make simple healthy dinners as much as possible. And honestly, it isn’t hard! Plus it is soooo much more worth it.

Growing up my favorite thing ever was buffalo chicken sandwiches from Subway, or Penn Station, etc. Wherever! I couldn’t get enough. But once I grew older and realized how many calories are in the delicious sandwich, I immediately went cold turkey and didn’t order them again. (Some buffalo chicken sandwiches have up to 1,200 calories!)

I knew there haaaad to be a way to make this sandwich in a healthier way. And I am definitely not disappointed 😉

Cook & Shred chicken

Mix franks red hot, greek yogurt, chili powder, salt and pepper and chicken stock.

Spread on sandwich bread of choice, and top with choice of cheese. (I chose an 100 calorie sandwich thin, and blue cheese!)

Bake at 350 for 15-20 minutes, or cheese is slightly melted and chicken is slightly browned.

Recipe: 

• boneless chicken (shredded)

• 1/2 cup franks red hot

• 1/4 cup greek yogurt

• 1 teaspoon salt & pepper

• 1 teaspoon chili powder

• dash of garlic salt

• blue cheese for topping (I also mixed a little in)

• 1/4 cup chicken stock

• Whole wheat 100 calorie sandwich thins

Directions:

• Mix together ingredients in large bowl

• Top sandwich thin with mixture

• Bake at 350 degrees for about 15-20 minutes.
