A breakfast kind of day

So, last night my friend Keith made us the most incredible dinner ever….

He comes from a long line of italians who looove to cook, and has grown up on homemade pasta. So, as this didn’t seem like a huge deal to him, my jaw was practically dropped to the floor the entire time I watched his beautiful pasta making in progress. It was as delicious as it looks! And definitely makes me want to attempt my own at some point. Image

Training Day 2: when I hopped on the treadmill this morning I did not think there was ANY way I’d be able to run 3 miles… I was feeling tired and unmotivated, but once I started going I quickly got into a grove and kept going with it. Although I was a little bit slower today than yesterday, Im still just proud I kept going!

I followed my run with 15 minutes on the elliptical and a 7 minute circuit found on a new app I just downloaded called 7-minute workout! It’s a great one! It runs you through a series of 12 exercises, 30 seconds each. Its nice because you aren’t stuck doing the same thing for too long. Which if you’re anything like me, is very important. I get so bored so easily! So this workout was fabulous.

I headed off to work, coming back home around 12:30 to eat lunch. Yes, this photo is of my lunch, not breakfast. Do you ever have days where you just crave certain things? Well, lately it has been cinnamon life. I am a huge cereal lover, and sometimes you just gotta listen to your body. So, breakfast for lunch it was!

When I got home from work I was starving. I wanted something fast, easy and healthy…sooo…what do you know?! Breakfast again! I love brinner. So much. I scrambled up some egg whites & spinach, with a side of some carrots, celery & hummus. For a sweet treat I concocted together a sweet greek yogurt dip and dipped apple slices & strawberries in it. Yum!! Then obviously I mayyy have just had to have half a slice of the banana bread I made this weekend 🙂 It all hit the spot.

Greek Yogurt dip:

  • vanilla greek yogurt
  • cinnamon
  • peanut butter
  • vanilla
  • honey

Skinny {Olive Garden} Chicken Gnocchi Soup

You know when you eat something reallllllly good? And for the whole entire week you can’t get your mind off that one thing? Welp. I had a baaad case of that. My boyfriend & I went out to dinner at Olive Garden on Tuesday and he ordered Chicken Gnocchi Soup with his meal, and naturally I stole a few, errr maybe 5, bites (mostly of the gnocchi, yum!) I’ve been dreaming of this soup ever since! So, thanks to good ol’ Pinterest (so obsessed. It’s a problem) I found a great copycop recipe that is healthier than the original recipe. Happy day!

I’m not much of a pasta fan. Every once in a while I’ll crave it, but other than that I could probably give it up altogether. (Don’t worry, I dont even have an ounce of Italian in my blood.) HOWEVER, I absolutely adore gnocchi. It’s something I just recently discovered existed a few years ago. Isnt is weird that some people are SO familiar with some foods that other people haven’t even tried/heard of? My friend and I were having a conversation about her favorite childhood meals, and one of hers was Stromboli. I found this so funny because I didn’t try my first Stromboli until I was in my 20’s! But it was totally a staple in her childhood. So funny!

This soup is delicious & really wasn’t hard to make at all.

Here’s what you’ll need:

3 -4 chicken breasts, cooked and diced
4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced
1 cup fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi

1. Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
2. Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
3. Add spinach and cook for another 1-2 minutes until spinach is wilted.
4. (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
5. Ladle into bowls and serve!

This weekend i came home to visit my dad for his birthday! Some relaxing time at home with the family is exactly what I needed. Ice cream cake + pumpkin coffee + my puppy Moe makes for a pretttty wonderful Friday 🙂

Have you guys seen these?! My dad got a Keurig for his birthday and we’ve all been obsessed with it since. He bought 18 pumpkin spice K-cups, and I think I maaaay be responsible for the majority of them being gone already! GIMME ALL THE PUNKIN!

 

I didn’t have many crazy plans this weekend and i was toootally okay with that.

Saturday started off with a shhhweaty workout at my favorite LA fitness gym. I was feeling a little A.D.D. so i played musical machines!  I jumped from machine to machine, doing 10-15 minutes on each before switching to the next. I started with a warmup mile run on the treadmill, followed by 15 minutes on the stairmaster and 15 minutes on the elliptical alternating between resistance 10 and 12 every few minutes (while watching the miley cyrus story on MTV. While I wouldn’t have watched this outside the gym, Im not even gonna lie, it really kept my attention and made my workout fly by. Ha!)

IMG_7554 I followed my 30ish minutes of random cardio with strength training circuits. I started with this wonderful workout I found online. I love it! It was fun, challenging, and kept me going. I felt it heavy on the abs, but I liked that about it! This is definitely a workout i will do on off-days from the gym.

Last night I had a great time catching up with my college roommate, eating pizza & drinking wine. Although I am sad I didn’t have a wild halloween party to dress up for, this is definitely my ideal chill saturday night 🙂

Today I decided to try out a few recipes i have been meaning to try for awhile!

PESTO HUMMUS

Just to let you know, I am addicted to hummus. No, like…really addicted. I have 2 tubs of it (usually family sized) in my fridge at all times. Like, no matter what. I put it on everything, including just eating it by the spoonful. This recipe will be eaten the same way! I love pesto, I love hummus, why not mix the 2? It turned out wonderfully! Simple, 3 ingredients, cant go wrong!

All you need is:
• 1 can chickpeas
• 2 tbsp pesto
• 1/4 cup tahini sauce

ALMOND BUTTER

I recently discovered Justin’s almond butter and my life hasn’t been the same since. I have always been a huge peanut butter lover, but holy cow — almond butter!? Does it get any better than that? I think not.

I tried my own by simply roasting 2 cups of raw almonds (I seasoned them a bit with cinnamon & salt first) for 10 minutes then placing in a food processor.

I had to split the recipe in half and do it twice because my processor is small, but it all worked out! Once the almonds were starting to get grainy and more liquidy (is that a word?!) I added honey & cinnamon.IMG_7583IMG_7585 IMG_7593 IMG_7598

Mixed it all up for about 10-15 more minutes and voila! Almond butter! It is sososos delicious, and i cannot believe how easy it was! I want to try different variations of flavors next.

Now time to finish up some laundry and make my journey back to my apartment to get ready for this week. Have a great, lazy Sunday!

My workout of choice this weekend after venturing to 3 different gyms in 3 days…:

I did 30 seconds of each, two times. I love it. It works your entire body, and REALLY gets you breaking a sweat.

Speaking of great food, tonight I made overnight oats & cinnamon raisin energy bites!

The overnight oats were very similar to my earlier recipe I posted, but I added raisins, almond butter and pumpkin pie spice! Yum! I think they’ll make a delicious breakfast 🙂

Yum!

Energy bites:

  • 1 cup oats
  • 1/2 cup peanut butter (or other nut butter. I used low fat peanut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 2 tbsp chocolate chips
  • 1 tsp vanilla
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1/3 cup raisins

Mix all ingredients together in medium sized bowl. Place in refrigerator for 30 mins. Make into balls and place back in refrigerator. Enjoy!

So easy, yet so delicious 🙂 And only about 100 calories per bite. Perfect pre/post workout snack!

My dinner tonight was a snack dinner! Cottage cheese, hummus, and delicious Kashi chips! Yum! (I ate about twice that is actually shown 😉 )

Quiche is a funny word

I feel like I’m trying to say kiss with a weird accent. Kiss. Kish. Quiche? Ive been walking around saying it all morning, and it doesn’t get any less weird to me. Neither does that fact that I’m walking around talking to myself….. BUT whatever the case, it could be called a poo-poo platter and I’d still love it just the same! This recipe is UH-MAZE-ING.

I have a lot of favorite things in this world. Peanut butter, ice cream, rainy mornings, wine on the patio, long walks on the beach, snow days…..I’ll spare you the rest, but the list goes on and on. When it comes to food I have a few requirements that make a meal my favorite.

Number one — Cheese. The more cheese the better, in my opinion. ESPECIALLY if it’s goat cheese. (Or cheddar. Or feta. Or colby jack. Or…)  Nom nom nom! Cheese can take a dish to the next level!

Number two — Fresh Vegetables. I love a dish that has fresh veggies. I cant get enough of sautéed or roasted veggies! My favorites are mushrooms, zucchini, red pepper and onion. If you mix them all together (with cheese, naturally) Im a happy camper. Plus I just love the way they add beautiful color.

So what is my rambling getting at here? This dish meets MY MAIN TWO requirements to be considered my favorite meal! 

This cheesey, goey, eggy, wonderfulness is just about the perfect dish for any time of the day. AND, it was soooo easy to make. (Probably my number three meal requirement, since I know you were curious.)

After mucho research, I used the recipe found here. However, I brittified it a little bit. (Yeah, I just said that.) I added more vegetables, cottage cheese, and used cheddar instead of Muenster. (Ive always been a little intimidated by the name of that cheese…is that weird?)

You’ll need: 

  • 5 eggs
  • 2 egg whites
  • Goat Cheese (I used an entire log, and I’m not sorry about it.)
  • Reduced fat Cheddar Cheese
  • Mushrooms
  • Onion (I used sweet yellow)
  • 1 package of frozen spinach 
  • 1/3 cup Cottage Cheese 
  • Olive Oil
  • 1 teaspoon Salt
  • 1/8 teaspoon Pepper 
  • 1/4 cup Dill 

 

Directions: 

  1. Preheat oven to 350 degrees
  2. Head a teaspoon of olive oil in a skillet
  3. Add onion & mushrooms, cook until browned and soft
  4. Add spinach
  5. Cook until spinach is no longer frozen and liquids have evaporated
  6. Mix 5 eggs, 2 egg whites in a large bowl
  7. Add cottage cheese, salt, pepper, dill, and cheddar cheese
  8. Mix wet ingredients together 
  9. Add the mushrooms, spinach and onion mixture
  10. Pour into pie pan
  11. cover with goat cheese globs
  12. Bake for 30-40 minutes, until egg is set and no longer runny.

Sunday (no) Run day

Happy Sunday!

I really think sundays have become my favorite day of the week. (Besides Saturday, let’s be honest.) When I was in college I dreeeeaded Sundays because it meant I had to face the reality that I had been neglecting all weekend to go have fun, but now that I have a full time job and no homework, I really love Sunday! There are usually 3 main things I get done: laundry, dishes, food prep for the week, and nail painting. Typically followed by an early(ish) bedtime to get a good head start on the week. 

Question: Do you have routine “Sunday things”? 

Today is a little different from my typical Sunday because I spent the first half driving back from Cleveland. I drove up yesterday to sightsee in the city and go to an Indians game. The weather was awwwwful when we first arrived, but it shaped up to be a pretty nice day!

Today: 

Once I arrived home around noon, I was ready for lunch! I made tuna salad with chopped cherry tomatoes, pickles (since I didn’t have relish), and a tablespoon of light fat free mayonnaise. I dipped Special K multigrain crackers in it. (Im obsessed with juuuust about anything Special K. I dip these crackers in just about anything. Mostly because sticking my hand in a tub of hummus isn’t exactly socially acceptable.)

Workout:

I didn’t have time to go to the gym today with all the errands and things I had to do, so I did this quick, sweaty little workout! I’m almost positive I saved this from one of my favorite blogs, pbfingers.com. She posts lots of great workouts and motivation! I definitely advise checking her blog out! The workout was perfect, got my heartbeat going & broke a sweat.

I found this inspirational print on Instagram this morning, and was really moved by it. (Plus it is gooorgeeeous.) I feel like sometimes life gets so stressful and hectic that it gets easy to lose sight of what is truly important, so this is a good reminder. Just some Sunday motivation for you 🙂

First Post!

Welcome to Ice Cream for Breakfast! My blog featuring all things delicious, cooking, fitness & healthy lifestyles. I have been tossing around the idea of starting my very own blog for quite some time now, and today I decided is the perfect day to finally get on it!

Though I am not a personal trainer or dietician, I truly find joy in living an active lifestyle and eating well. I love cooking and baking healthy food, but I also love to treat myself! (hence my blog name, Ice Cream for Breakfast 😉 )

Cooking (well, mostly eating…) has also become something I am passionate about. I am a complete foodie who gets excited about little dumb things like when there’s a new episode of Chopped on, or when my grocery store suddenly decides to carry a new type of cheese. You know, that type of thing. (Nerd Alert)

I am a graphic designer, so do not be shocked if I post design-nerdy, pretty typography posters, or links to designy things like that. (Like the ice cream print above. Which also happens to be the background on my iPhone. Told you — nerdy.) I just can never get enough of that stuff! (That’s passion right there, huh?)
