A breakfast kind of day

So, last night my friend Keith made us the most incredible dinner ever….

He comes from a long line of italians who looove to cook, and has grown up on homemade pasta. So, as this didn’t seem like a huge deal to him, my jaw was practically dropped to the floor the entire time I watched his beautiful pasta making in progress. It was as delicious as it looks! And definitely makes me want to attempt my own at some point.ย Image

Training Day 2: when I hopped on the treadmill this morning I did not think there was ANY way I’d be able to run 3 miles… I was feeling tired and unmotivated, but once I started going I quickly got into a grove and kept going with it. Although I was a little bit slower today than yesterday, Im still just proud I kept going!

I followed my run with 15 minutes on the elliptical and a 7 minute circuit found on a new app I just downloaded called 7-minute workout! It’s a great one! It runs you through a series of 12 exercises, 30 seconds each. Its nice because you aren’t stuck doing the same thing for too long. Which if you’re anything like me, is very important. I get so bored so easily! So this workout was fabulous.

Iย headed off to work, coming back home around 12:30 to eat lunch. Yes, this photo is of my lunch, not breakfast. Do you ever have days where you just crave certain things? Well, lately it has been cinnamon life. I am a huge cereal lover, and sometimes you just gotta listen to your body. So, breakfast for lunch it was!

When I got home from work I was starving. I wanted something fast, easy and healthy…sooo…what do you know?! Breakfast again! I love brinner. So much. I scrambled up some egg whites & spinach, with a side of some carrots, celery & hummus. For a sweet treat I concocted together a sweet greek yogurt dip and dipped apple slices & strawberries in it. Yum!! Then obviously I mayyy have just had to have half a slice of the banana bread I made this weekend ๐Ÿ™‚ It all hit the spot.

Greek Yogurt dip:

  • vanillaย greek yogurt
  • cinnamon
  • peanut butter
  • vanilla
  • honey

Skinny {Olive Garden} Chicken Gnocchi Soup

You know when you eat something reallllllly good? And for the whole entire week you can’t get your mind off that one thing? Welp. I had a baaad case of that. My boyfriend & I went out to dinner at Olive Garden on Tuesday and he ordered Chicken Gnocchi Soup with his meal, and naturally I stole a few, errr maybe 5, bites (mostly of the gnocchi, yum!) I’ve been dreaming of this soup ever since! So, thanks to good ol’ Pinterest (so obsessed. It’s a problem) I found a great copycop recipe that is healthier than the original recipe. Happy day!

I’m not much of a pasta fan. Every once in a while I’ll crave it, but other than that I could probably give it up altogether. (Don’t worry, I dont even have an ounce of Italian in my blood.) HOWEVER, I absolutely adore gnocchi. It’s something I just recently discovered existed a few years ago. Isnt is weird that some people are SO familiar with some foods that other people haven’t even tried/heard of? My friend and I were having a conversation about her favorite childhood meals, and one of hers was Stromboli. I found this so funny because I didn’t try my first Stromboliย until I was in my 20’s! But it was totally a staple in her childhood. So funny!

This soup is delicious & really wasn’t hard to make at all.

Here’s what you’ll need:

3 -4 chicken breasts, cooked and diced
4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced
1 cup fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi

1. Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
2.ย Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
3.ย Add spinach and cook for another 1-2 minutes until spinach is wilted.
4.ย (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
5.ย Ladle into bowls and serve!
