Dark chocolate // sea salt // trail mix bark

This right here? Game changer.

That’s really all I have to say.

This recipe is not only super delicious, but it was proooobably the easiest thing I have ever made! I used trail mix in this recipe, but you could add anything you want. Cookies, nuts, candy, sprinkes, whatever! I am going to make this recipe for coworkers christmas presents!

  • 8 oz. dark chocolate chips
  • trail mix (i used a planter peanuts mix)
  • sea salt

Melt chocolate in microwave at 15 second increments until fully melted. Pour in pan lined with parchment paper. Top with trail mix & sea salt. Place in the freezer for 90 mins.

Banana Oat {20 calorie} cookies

Need a Monday pick-me-up?

Boy, do I have a {healthy} treat for you! Yesterday I was bumming around and suddenly had the urge to bake. (This happens far too often…) Not having exact ingredients for a lot of elaborate baking recipes, I decided to rummage through my pantry and make due with what I had. And well, that didn’t take long. I pulled out all of FIVE things. Yep. That’s it. AND, I guarantee that you all have them in your kitchen at this VERY moment.

Ingredients:

  • 1 cup oats
  • 2 bananas
  • 1/8 tsp cinnamon
  • 1/3 cup sliced almonds
  • Dark Chocolate Chips (to taste. I only had about 1 tbsp left in my bag)

Plus whatever else you’d like to add! Next time I think I’ll add raisings, white chocolate chips, and maybe some dried cranberries. These are so versatile, easy, and HEALTHY.

Each cookie is ONLY 20 CALORIES.

Low calorie, full of nutrients, and super simple to make. What more could you want? 🙂

Coconut Peanut Butter Vanilla Protein Bites

Happy Hummmmp day! 

I’m a huge fan of on-the-go snacks. I always look for something to grab on my way to the gym, or when I get home from work. And, well. I found the perfect snack. Protein balls! Not only are they super healthy, they absolutely delicious! I grab one on my way to the gym, and I freeze some and eat them as desserts! They’re fantastic, and satisfy even the most severe sweet tooths (not that I would know 😉 )

• 1 cup oats

• 1/2 cup peanut butter 

• 3 tbsp honey

• 1/4 cup applesauce

• 2 tbsp dark chocolate chips

• 1 scoop vanilla protein powder

• 1/3 cup unsweetened coconut flakes

Happy Monday! Hope that extra hour of sleep has you feeling energized & ready to go! 

My monday started off freeeeezing. I forgot that I turned my heat off last night, so when I woke up the temperature in my apartment made it THAT much harder to get out of bed. Despite barely being able to move, I geared up and headed to the gym!

Over the weekend I signed up for my VERY FIRST 5K! I’ve never been much of a runner. In fact, I really never ran distances until last January, after making running my New Years Resolution. I started slow, 1 mile, 1.5 miles, 2, etc., and now I feel like I am ready to tackle my first 5k! I love how free running makes me feel, and I’m hoping that this run will start my love for races! 

I am doing the Jingle Bell Run/Walk for Arthritis in December, and I am SO excited! Image

This morning I began my training on the treadmill. I ran 3 miles starting at 6.5 and making my way up to 7.0. I walked the other .1 mile!

Following my run was 15 minutes on the elliptical for a cool-down, and then my own circuit which included:

• crunches

• mountain climbers

• burpees

• exercise ball crunches

• pushups

• planks

• russian twists

 

Breakfast

lately has been Cinnamon Life. I used to eat this cereal EVERY day in high school, but really havent had it much since…so I just knew I had to buy it when I saw it at the store the other day. Its been hittin’ the spot! Topped with 1/2 a banana. Nom Nom Nom. Favorite breakfast… also mayyy have been my dinner last night… 🙂  No shame!

Lunch 

is a snacky one. Carrots, celery, 1/2 cup of cottage cheese, 2 tbsp hummus, and an apple.

I’ve been tracking my calorie intake and workouts on “My Fitness Pal app.” I love it! It helps keep me organized and on track. If you’re trying to watch your caloric intake, or just like to keep track of your workouts,  I definitely advise this app!

7 things I’m Lovin’ Lately

Happy Sunday! Hope you’re enjoying yours thus far, and hope this “falling back” has given you more time to relax! I honestly didn’t even remember that we fell back an hour last night until a few hours ago….wooops. Shows you how much I pay attention to the clock on lazy Sundays 🙂 

Here’s 7 things I’m lovin this week:

1. Fall scented Candles. I’m a sucker for all candles, really. Specifically ones that make my apartment smell like I just made a batch of homemade cookies! I’m really diggin’ the pumpkin spice candles! They make every room so cozy! 

2. Great Lakes Christmas Ale. It’s baaaaaack! This ale is by far my favorite beer, probably like, ever. It really tastes like Christmas in a bottle. 

3. EOS Lip Balm. I just love this! I love that its in a round little ball, and it makes my lips sooo soft! It comes in a bunch of different colors/flavors. Definitely my new favorite.

4. Justin’s Almond Butter. GAAAH. Words cant even express how much I love this stuff. I love topping my oatmeal with it, making almond butter & banana sandwiches, and topping a banana with it. So yummy! Obsessed. I need to try the other flavors! 

5. This Desktop Wallpaper. I found this beauty here: http://sunshine-bloggers.blogspot.com/2013/10/wallpaper-hello-october-2013.html. I love turning on my computer and being greeted by such a fun wallpaper!

6. Pumpkin Spice Coffee Creamer. I love coffee. I love pumpkin. I LOVE PUMPKIN COFFEE.

7. Nike Training App. This app is amazing. It gives you workouts to complete, shows videos and times you as you’re doing it. It’s the best, especially on mindless days where you don’t feel like making up your own workout! 

Skinny {Olive Garden} Chicken Gnocchi Soup

You know when you eat something reallllllly good? And for the whole entire week you can’t get your mind off that one thing? Welp. I had a baaad case of that. My boyfriend & I went out to dinner at Olive Garden on Tuesday and he ordered Chicken Gnocchi Soup with his meal, and naturally I stole a few, errr maybe 5, bites (mostly of the gnocchi, yum!) I’ve been dreaming of this soup ever since! So, thanks to good ol’ Pinterest (so obsessed. It’s a problem) I found a great copycop recipe that is healthier than the original recipe. Happy day!

I’m not much of a pasta fan. Every once in a while I’ll crave it, but other than that I could probably give it up altogether. (Don’t worry, I dont even have an ounce of Italian in my blood.) HOWEVER, I absolutely adore gnocchi. It’s something I just recently discovered existed a few years ago. Isnt is weird that some people are SO familiar with some foods that other people haven’t even tried/heard of? My friend and I were having a conversation about her favorite childhood meals, and one of hers was Stromboli. I found this so funny because I didn’t try my first Stromboli until I was in my 20’s! But it was totally a staple in her childhood. So funny!

This soup is delicious & really wasn’t hard to make at all.

Here’s what you’ll need:

3 -4 chicken breasts, cooked and diced
4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced
1 cup fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi

1. Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
2. Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
3. Add spinach and cook for another 1-2 minutes until spinach is wilted.
4. (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
5. Ladle into bowls and serve!
