A breakfast kind of day

So, last night my friend Keith made us the most incredible dinner ever….

He comes from a long line of italians who looove to cook, and has grown up on homemade pasta. So, as this didn’t seem like a huge deal to him, my jaw was practically dropped to the floor the entire time I watched his beautiful pasta making in progress. It was as delicious as it looks! And definitely makes me want to attempt my own at some point. Image

Training Day 2: when I hopped on the treadmill this morning I did not think there was ANY way I’d be able to run 3 miles… I was feeling tired and unmotivated, but once I started going I quickly got into a grove and kept going with it. Although I was a little bit slower today than yesterday, Im still just proud I kept going!

I followed my run with 15 minutes on the elliptical and a 7 minute circuit found on a new app I just downloaded called 7-minute workout! It’s a great one! It runs you through a series of 12 exercises, 30 seconds each. Its nice because you aren’t stuck doing the same thing for too long. Which if you’re anything like me, is very important. I get so bored so easily! So this workout was fabulous.

I headed off to work, coming back home around 12:30 to eat lunch. Yes, this photo is of my lunch, not breakfast. Do you ever have days where you just crave certain things? Well, lately it has been cinnamon life. I am a huge cereal lover, and sometimes you just gotta listen to your body. So, breakfast for lunch it was!

When I got home from work I was starving. I wanted something fast, easy and healthy…sooo…what do you know?! Breakfast again! I love brinner. So much. I scrambled up some egg whites & spinach, with a side of some carrots, celery & hummus. For a sweet treat I concocted together a sweet greek yogurt dip and dipped apple slices & strawberries in it. Yum!! Then obviously I mayyy have just had to have half a slice of the banana bread I made this weekend 🙂 It all hit the spot.

Greek Yogurt dip:

  • vanilla greek yogurt
  • cinnamon
  • peanut butter

Let the training begin…

Happy Monday! Hope that extra hour of sleep has you feeling energized & ready to go! 

My monday started off freeeeezing. I forgot that I turned my heat off last night, so when I woke up the temperature in my apartment made it THAT much harder to get out of bed. Despite barely being able to move, I geared up and headed to the gym!

Over the weekend I signed up for my VERY FIRST 5K! I’ve never been much of a runner. In fact, I really never ran distances until last January, after making running my New Years Resolution. I started slow, 1 mile, 1.5 miles, 2, etc., and now I feel like I am ready to tackle my first 5k! I love how free running makes me feel, and I’m hoping that this run will start my love for races! 

I am doing the Jingle Bell Run/Walk for Arthritis in December, and I am SO excited! Image

This morning I began my training on the treadmill. I ran 3 miles starting at 6.5 and making my way up to 7.0. I walked the other .1 mile!

Following my run was 15 minutes on the elliptical for a cool-down, and then my own circuit which included:

• crunches

• mountain climbers

• burpees

• exercise ball crunches

• pushups

• planks

• russian twists

 

Breakfast

lately has been Cinnamon Life. I used to eat this cereal EVERY day in high school, but really havent had it much since…so I just knew I had to buy it when I saw it at the store the other day. Its been hittin’ the spot! Topped with 1/2 a banana. Nom Nom Nom. Favorite breakfast… also mayyy have been my dinner last night… 🙂  No shame!

Lunch 

is a snacky one. Carrots, celery, 1/2 cup of cottage cheese, 2 tbsp hummus, and an apple.

I’ve been tracking my calorie intake and workouts on “My Fitness Pal app.” I love it! It helps keep me organized and on track. If you’re trying to watch your caloric intake, or just like to keep track of your workouts,  I definitely advise this app!

Sunday Roundup!

This weekend i came home to visit my dad for his birthday! Some relaxing time at home with the family is exactly what I needed. Ice cream cake + pumpkin coffee + my puppy Moe makes for a pretttty wonderful Friday 🙂

Have you guys seen these?! My dad got a Keurig for his birthday and we’ve all been obsessed with it since. He bought 18 pumpkin spice K-cups, and I think I maaaay be responsible for the majority of them being gone already! GIMME ALL THE PUNKIN!

 

I didn’t have many crazy plans this weekend and i was toootally okay with that.

Saturday started off with a shhhweaty workout at my favorite LA fitness gym. I was feeling a little A.D.D. so i played musical machines!  I jumped from machine to machine, doing 10-15 minutes on each before switching to the next. I started with a warmup mile run on the treadmill, followed by 15 minutes on the stairmaster and 15 minutes on the elliptical alternating between resistance 10 and 12 every few minutes (while watching the miley cyrus story on MTV. While I wouldn’t have watched this outside the gym, Im not even gonna lie, it really kept my attention and made my workout fly by. Ha!)

IMG_7554 I followed my 30ish minutes of random cardio with strength training circuits. I started with this wonderful workout I found online. I love it! It was fun, challenging, and kept me going. I felt it heavy on the abs, but I liked that about it! This is definitely a workout i will do on off-days from the gym.

Last night I had a great time catching up with my college roommate, eating pizza & drinking wine. Although I am sad I didn’t have a wild halloween party to dress up for, this is definitely my ideal chill saturday night 🙂

Today I decided to try out a few recipes i have been meaning to try for awhile!

PESTO HUMMUS

Just to let you know, I am addicted to hummus. No, like…really addicted. I have 2 tubs of it (usually family sized) in my fridge at all times. Like, no matter what. I put it on everything, including just eating it by the spoonful. This recipe will be eaten the same way! I love pesto, I love hummus, why not mix the 2? It turned out wonderfully! Simple, 3 ingredients, cant go wrong!

All you need is:
• 1 can chickpeas
• 2 tbsp pesto
• 1/4 cup tahini sauce

ALMOND BUTTER

I recently discovered Justin’s almond butter and my life hasn’t been the same since. I have always been a huge peanut butter lover, but holy cow — almond butter!? Does it get any better than that? I think not.

I tried my own by simply roasting 2 cups of raw almonds (I seasoned them a bit with cinnamon & salt first) for 10 minutes then placing in a food processor.

I had to split the recipe in half and do it twice because my processor is small, but it all worked out! Once the almonds were starting to get grainy and more liquidy (is that a word?!) I added honey & cinnamon.IMG_7583IMG_7585 IMG_7593 IMG_7598

Mixed it all up for about 10-15 more minutes and voila! Almond butter! It is sososos delicious, and i cannot believe how easy it was! I want to try different variations of flavors next.

Now time to finish up some laundry and make my journey back to my apartment to get ready for this week. Have a great, lazy Sunday!

My workout of choice this weekend after venturing to 3 different gyms in 3 days…:

  • 2 mile run
  • 15 minute stair master
  • 30 minutes elliptical

I did 30 seconds of each, two times. I love it. It works your entire body, and REALLY gets you breaking a sweat.

Speaking of great food, tonight I made overnight oats & cinnamon raisin energy bites!

The overnight oats were very similar to my earlier recipe I posted, but I added raisins, almond butter and pumpkin pie spice! Yum! I think they’ll make a delicious breakfast 🙂

Yum!

Energy bites:

  • 1 cup oats
  • 1/2 cup peanut butter (or other nut butter. I used low fat peanut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 2 tbsp chocolate chips
  • 1 tsp vanilla
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1/3 cup raisins

Mix all ingredients together in medium sized bowl. Place in refrigerator for 30 mins. Make into balls and place back in refrigerator. Enjoy!

So easy, yet so delicious 🙂 And only about 100 calories per bite. Perfect pre/post workout snack!

My dinner tonight was a snack dinner! Cottage cheese, hummus, and delicious Kashi chips! Yum! (I ate about twice that is actually shown 😉 )

Holy Zucchini

Happy Weekend, friends! I hope yours is going famously so far 🙂

Yesterday morning my day started bright n early with a trip to the gym! Nothing like getting your workout over with before 10 a.m.! On the way to the gym I enjoyed my favorite cereal evvvver, special K chocolatey delight! (With strawberries! dreams do come true.) Im a huge snacker, and the car is my favorite place to snack.

My workout yesterday included:

  • 1.5 mile sprints on the treadmill, alternating speeds
  • 10 mins on the rowing machine
  • 25 mins stairmaster

After the gym I decided to swing by the Farmers Market, down the street from my house. I absolutely adore farmers market, and getting fresh produce. I love knowing where my food came from, and everything here is super cheap! I browsed a bunch of vegetable vendors as well as an ammmmaaaazzzzing salsa vendor. This man makes and jars all of his salsa himself. Pretty impressive, and super tasty! I ended up getting some tomatoes, GIANT zucchini, nectarines, homemade tomato sauce, and homemade salsa.

When I got home I decided to cook up some of my veggies and throw them on some whole grain pasta! The mix included broccoli, tomatoes, grilled chicken, and zucchini, sprinkled with goat cheese and the homemade marinara sauce. Deeelish!

10 is the magic number

HAPPY FRIDAY! 😀

I don’t know about you, but I’m not sure I’ve ever been more excited to end a work week. Between waking up at 6:00 a.m. to get a good workout in, and staying late at work, I am completely drained!

Workout: 

When I go to the gym I usually have a plan in my head. But lately I’ve been realizing that I really only do one workout the days I don’t meet with my trainer: running & elliptical. And honestly, I am so sick of it! I talked to my trainer and he suggested that I try different machines. I am a not, I repeat NOT, a fan of change, so I was a little resistant at first, but I am SO very glad I did.

He suggested trying to stair master. Umm this thing looks like a death machine, hence why I’ve never tried it before. Seriously, who in their right mind is like, “oh that looks fun and inviting. Let me just go climb some stairs and probably fall backwards in front of all these macho-men-workout-gurus.” Yeah, those were my initial thoughts, but oh how far I’ve come. Its actually a great workout and once you’re up there you kinda feel like the queen of the gym. So, there’s that. (Im still really afraid that I’ll fall backwards or miss a step or something. Stay tuned: I’m sure it’ll happen.)

10 is the magic number today! My workout today included:

  •  10 minutes on the treadmill. Starting at speed 6 and working my way up to 7.5 by the end.
  •  10 minutes on the stair-master. (Still didn’t fall. Hallelujah)
  •  Ab workout: medicine ball side twists  // medicine ball half crunches // exercise ball rollouts // 45 second plank. 25 times each, 3 times.
  •  10 minutes on the elliptical for a cool-down. On resistance 10! on incline 10!

10 10 10 10 10 10 10 10 10 10. SO many 10’s! I wonder if this 10 theme will reoccur in my day today!

 

Things I’m loving this week: 

• Kind Bars. I am a HUGE fan of granola/power/energy bars. They’re so perfect for on-the-go schedules like mine and they give me fuel and nutrients I need. Lately, I’ve really been diggin’ kind bars. Especially this KIND (haha, get it?)  url

• Coconut Water. Now, I hate normal coconut water. But give me this flavored stuff and I’m a happy camper. Which probably means it’s really not coconut water anymore, but I still love it nonetheless.

Skinny Buffalo Chicken Sandwich

Workout: Today started bright n early with a trip to the gym. I hopped on the treadmill for my favorite: interval running. I shifted between speeds and inclines for about 25 minutes. Something about changing the pace really keeps me going! Then I finished up with 20 minutes on the elliptical.

Healthy and easy: my 2 favorite words when it comes to dinner time. It’s easy to get sucked into the appeal and convenience of fast food after a long day of work, but stay far away! There are plenty healthier options out there. I know after work the last thing I want to do is prep a meal and wait for it to cook for a few hours so I try to find quick meals that I know aren’t bad for me! I try to make simple healthy dinners as much as possible. And honestly, it isn’t hard! Plus it is soooo much more worth it.

Growing up my favorite thing ever was buffalo chicken sandwiches from Subway, or Penn Station, etc. Wherever! I couldn’t get enough. But once I grew older and realized how many calories are in the delicious sandwich, I immediately went cold turkey and didn’t order them again. (Some buffalo chicken sandwiches have up to 1,200 calories!)

I knew there haaaad to be a way to make this sandwich in a healthier way. And I am definitely not disappointed 😉

Cook & Shred chicken

Mix franks red hot, greek yogurt, chili powder, salt and pepper and chicken stock.

Spread on sandwich bread of choice, and top with choice of cheese. (I chose an 100 calorie sandwich thin, and blue cheese!)

Bake at 350 for 15-20 minutes, or cheese is slightly melted and chicken is slightly browned.

Recipe: 

• boneless chicken (shredded)

• 1/2 cup franks red hot

• 1/4 cup greek yogurt

• 1 teaspoon salt & pepper

• 1 teaspoon chili powder

• dash of garlic salt

• blue cheese for topping (I also mixed a little in)

• 1/4 cup chicken stock

• Whole wheat 100 calorie sandwich thins

Directions:

• Mix together ingredients in large bowl

• Top sandwich thin with mixture

• Bake at 350 degrees for about 15-20 minutes.
