Things I’m Loving Lately

Sundays are the best.

Can we just all take a minute and agree on that? For me, Sundays are all about relaxing, reflecting, and catching up on the things I don’t have time for during the busy work week. I just love them!

Things I’m diggin’ lately:

1. Starbucks Red Cups.  10_28_13_starbucks_holiday_2013_1My addiction to Christmas can get a litttttttle out of hand, and I think every year it starts earlier and earlier. I apologize if you’re one of those people who thinks stores being decked out in Christmas decor directly after Halloween is absurd, because I kinda sorta really love it 🙂 But anyway, Im addicted to Skinny Peppermint Mochas! And I mean, the cup alone makes the entire experience worthwhile. (I miiiiiiight be sipping one of these as we speak…) Here is a link to one of my favorite package design websites explaining the entire design process behind the beloved red cups. (Yes, Im a design nerd. Yes, I could look at this website all day long. Yes, sometimes I do.) But I promise it’s really interesting!!

I just saw a photo of this pullover on Julie’s blog and haven’t been able to stop thinking about it since! It just looks so comfy, and perfect for outdoor winter running. I also didn’t realize Heidi Klum had her own line for New Balance…She does it all! definitely something worth exploring.

3. These Blogs: These ladies are great! They are so motivational, and post lots of great advice, workouts, recipes, etc. My daily reads! I would highly advise checking them out 🙂

4. Breaking Bad. Breaking-Bad

I know I’m late to hop on the Breaking Bad Fan Train, but better late than never. I am so obsessed. Seriously addicted. If you havent watched this show yet, stop whatever you’re doing and start watching. So. Addicted.

5. Overnight Oats.

know I’ve chatted your ears off about these before, (here, actually) but I just have to let you know how much I truly adore them. Its the most perfect, easiest breakfast in the world. Prepare the night before, enjoy in the morning! To me, because they’re cold and sweet and creamy, it truly is like eating ice cream for breakfast. AND oh my gosh, if you make them in a nearly empty peanut butter jar, holy cow. They’re even MORE fantastic!

Holy beautiful. These are gorgeous. I want one. Or five. Bad. This website has tons of gorgeous gems.

A breakfast kind of day

So, last night my friend Keith made us the most incredible dinner ever….

He comes from a long line of italians who looove to cook, and has grown up on homemade pasta. So, as this didn’t seem like a huge deal to him, my jaw was practically dropped to the floor the entire time I watched his beautiful pasta making in progress. It was as delicious as it looks! And definitely makes me want to attempt my own at some point. Image

Training Day 2: when I hopped on the treadmill this morning I did not think there was ANY way I’d be able to run 3 miles… I was feeling tired and unmotivated, but once I started going I quickly got into a grove and kept going with it. Although I was a little bit slower today than yesterday, Im still just proud I kept going!

I followed my run with 15 minutes on the elliptical and a 7 minute circuit found on a new app I just downloaded called 7-minute workout! It’s a great one! It runs you through a series of 12 exercises, 30 seconds each. Its nice because you aren’t stuck doing the same thing for too long. Which if you’re anything like me, is very important. I get so bored so easily! So this workout was fabulous.

I headed off to work, coming back home around 12:30 to eat lunch. Yes, this photo is of my lunch, not breakfast. Do you ever have days where you just crave certain things? Well, lately it has been cinnamon life. I am a huge cereal lover, and sometimes you just gotta listen to your body. So, breakfast for lunch it was!

When I got home from work I was starving. I wanted something fast, easy and healthy…sooo…what do you know?! Breakfast again! I love brinner. So much. I scrambled up some egg whites & spinach, with a side of some carrots, celery & hummus. For a sweet treat I concocted together a sweet greek yogurt dip and dipped apple slices & strawberries in it. Yum!! Then obviously I mayyy have just had to have half a slice of the banana bread I made this weekend 🙂 It all hit the spot.

Skinny {Olive Garden} Chicken Gnocchi Soup

You know when you eat something reallllllly good? And for the whole entire week you can’t get your mind off that one thing? Welp. I had a baaad case of that. My boyfriend & I went out to dinner at Olive Garden on Tuesday and he ordered Chicken Gnocchi Soup with his meal, and naturally I stole a few, errr maybe 5, bites (mostly of the gnocchi, yum!) I’ve been dreaming of this soup ever since! So, thanks to good ol’ Pinterest (so obsessed. It’s a problem) I found a great copycop recipe that is healthier than the original recipe. Happy day!

I’m not much of a pasta fan. Every once in a while I’ll crave it, but other than that I could probably give it up altogether. (Don’t worry, I dont even have an ounce of Italian in my blood.) HOWEVER, I absolutely adore gnocchi. It’s something I just recently discovered existed a few years ago. Isnt is weird that some people are SO familiar with some foods that other people haven’t even tried/heard of? My friend and I were having a conversation about her favorite childhood meals, and one of hers was Stromboli. I found this so funny because I didn’t try my first Stromboli until I was in my 20’s! But it was totally a staple in her childhood. So funny!

This soup is delicious & really wasn’t hard to make at all.

Here’s what you’ll need:

3 -4 chicken breasts, cooked and diced
4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced
1 cup fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi

1. Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
2. Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
3. Add spinach and cook for another 1-2 minutes until spinach is wilted.
4. (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
5. Ladle into bowls and serve!

My workout of choice this weekend after venturing to 3 different gyms in 3 days…:

I did 30 seconds of each, two times. I love it. It works your entire body, and REALLY gets you breaking a sweat.

Speaking of great food, tonight I made overnight oats & cinnamon raisin energy bites!

The overnight oats were very similar to my earlier recipe I posted, but I added raisins, almond butter and pumpkin pie spice! Yum! I think they’ll make a delicious breakfast 🙂

Yum!

Energy bites:

  • 1 cup oats
  • 1/2 cup peanut butter (or other nut butter. I used low fat peanut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 2 tbsp chocolate chips
  • 1 tsp vanilla
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1/3 cup raisins

Mix all ingredients together in medium sized bowl. Place in refrigerator for 30 mins. Make into balls and place back in refrigerator. Enjoy!

So easy, yet so delicious 🙂 And only about 100 calories per bite. Perfect pre/post workout snack!

My dinner tonight was a snack dinner! Cottage cheese, hummus, and delicious Kashi chips! Yum! (I ate about twice that is actually shown 😉 )

Gooey Chewy S’mores Cookies

First. I am absolutely ashamed to admit that I have no had a SINGLE Smore this entire Summer. It’s August. This isn’t fine. As I realized this the other day, and had a sweet tooth the size of Texas, I just knew I had to suffice my smore craving by making something ooey gooey and chewy. Do you ever just get in the mood to bake? It seems every Friday night that’s all I want to do (old). Whatever, there’s nothing better than a glass of wine, chick flicks and baking!

I found this delicious recipe here. I must say, these cookies turned out delicious and made my entire apartment smell uh-maze-ing…however, they don’t look as pretty as I would hope 😦 oh well. Ugly cookies are cookies, too! No cookie left behind! To avoid ugly cookies — I would definitely suggest refrigerating your dough overnight. That way when you bake the cookies they don’t melt into flat pancakes like mine did. Just some food for thought!

Ingredients:

  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • pinch salt, optional and to taste
  • 1 cup coarsely chopped graham crackers, about 4 full-size cracker sheets
  • 2 cups (one 12-ounce bag) semi-sweet chocolate chips
  • 1 1/4 cups Marshmallow Bits (regular mini-marshmallows may be substituted; if using, shelter them with some dough and don’t let them bake directly on baking sheet to prevent scorching)

 

Directions:

  1. To the bowl of a stand mixer fitted with the paddle attachment, combine the butter, sugars, egg, vanilla, and beat on medium-high speed until well-creamed, light and fluffy, about 5 minutes (or use a hand mixer and beat for at least 7 minutes).
  2. Stop, scrape down the sides of the bowl, and add the flour, cornstarch, baking soda, optional salt, and mix until just combined, about 1 minute.
  3. Add the graham crackers, chocolate chips, marshmallows and beat momentarily to incorporate, less than 1 minute, or fold in by hand.
  4. Using a medium 2-inch spoon form heaping two tablespoon mounds (I made 26). Place mounds on a large plate, flatten mounds slightly with your palm, cover with plastic wrap, and refrigerate for at least 2 hours, or up to 5 days, before baking. Do not bake with warm dough because cookies will spread and bake thinner and flatter.
  5. Preheat oven to 350F, line a baking sheet, spray with cooking spray. Place mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet). Bake for 8 minutes, or until edges have set and tops are just beginning to set, even if slightly undercooked, pale and glossy in the center. Do not bake longer than 9 minutes if you want ooey-gooey Smores-like cookies because they firm up as they cool.

Sunday (no) Run day

I really think sundays have become my favorite day of the week. (Besides Saturday, let’s be honest.) When I was in college I dreeeeaded Sundays because it meant I had to face the reality that I had been neglecting all weekend to go have fun, but now that I have a full time job and no homework, I really love Sunday! There are usually 3 main things I get done: laundry, dishes, food prep for the week, and nail painting. Typically followed by an early(ish) bedtime to get a good head start on the week. 

Question: Do you have routine “Sunday things”? 

Today is a little different from my typical Sunday because I spent the first half driving back from Cleveland. I drove up yesterday to sightsee in the city and go to an Indians game. The weather was awwwwful when we first arrived, but it shaped up to be a pretty nice day!

Today: 

Once I arrived home around noon, I was ready for lunch! I made tuna salad with chopped cherry tomatoes, pickles (since I didn’t have relish), and a tablespoon of light fat free mayonnaise. I dipped Special K multigrain crackers in it. (Im obsessed with juuuust about anything Special K. I dip these crackers in just about anything. Mostly because sticking my hand in a tub of hummus isn’t exactly socially acceptable.)

Workout:

I didn’t have time to go to the gym today with all the errands and things I had to do, so I did this quick, sweaty little workout! I’m almost positive I saved this from one of my favorite blogs, pbfingers.com. She posts lots of great workouts and motivation! I definitely advise checking her blog out! The workout was perfect, got my heartbeat going & broke a sweat.

I found this inspirational print on Instagram this morning, and was really moved by it. (Plus it is gooorgeeeous.) I feel like sometimes life gets so stressful and hectic that it gets easy to lose sight of what is truly important, so this is a good reminder. Just some Sunday motivation for you 🙂
