Skinny Buffalo Chicken Sandwich

Workout: Today started bright n early with a trip to the gym. I hopped on the treadmill for my favorite: interval running. I shifted between speeds and inclines for about 25 minutes. Something about changing the pace really keeps me going! Then I finished up with 20 minutes on the elliptical.

Healthy and easy: my 2 favorite words when it comes to dinner time. It’s easy to get sucked into the appeal and convenience of fast food after a long day of work, but stay far away! There are plenty healthier options out there. I know after work the last thing I want to do is prep a meal and wait for it to cook for a few hours so I try to find quick meals that I know aren’t bad for me! I try to make simple healthy dinners as much as possible. And honestly, it isn’t hard! Plus it is soooo much more worth it.

Growing up my favorite thing ever was buffalo chicken sandwiches from Subway, or Penn Station, etc. Wherever! I couldn’t get enough. But once I grew older and realized how many calories are in the delicious sandwich, I immediately went cold turkey and didn’t order them again. (Some buffalo chicken sandwiches have up to 1,200 calories!)

I knew there haaaad to be a way to make this sandwich in a healthier way. And I am definitely not disappointed 😉

Cook & Shred chicken

Mix franks red hot, greek yogurt, chili powder, salt and pepper and chicken stock.

Spread on sandwich bread of choice, and top with choice of cheese. (I chose an 100 calorie sandwich thin, and blue cheese!)

Bake at 350 for 15-20 minutes, or cheese is slightly melted and chicken is slightly browned.

Recipe: 

• boneless chicken (shredded)

• 1/2 cup franks red hot

• 1/4 cup greek yogurt

• 1 teaspoon salt & pepper

• 1 teaspoon chili powder

• dash of garlic salt

• blue cheese for topping (I also mixed a little in)

• 1/4 cup chicken stock

• Whole wheat 100 calorie sandwich thins

Directions:

• Mix together ingredients in large bowl

• Top sandwich thin with mixture

• Bake at 350 degrees for about 15-20 minutes.

Strawberry Overnight Oats

Monday mornings are so difficult for me. I don’t know about you, but I always want to throw my phone across the room once my alarm goes off. I press snooze nearly 5 times before I actually get my butt out of bed. Well, this morning was no different. BUT, once I’m out of bed, Im ready to go!

Workout: 

Bright n early, I headed to my personal training session. Every Monday morning I meet with a personal trainer, and I absolutely looove it. (Although during it I usually want to collapse and die, afterwards I feel uh-maze-inggg.) I love working out in the mornings because it jump-starts my day and it’s nice to get it out of the way. Plus those endorphins aren’t bad either 😉

Breakfast:

Last night I prepped a batch of my favorite breakfast — overnight oats! I love this recipe because I prep it the night before and just grab it out of the fridge in the morning. Perfect if you have a busy schedule — plus, soooo delicious! Saving time in the morning makes all the difference.

1 vanilla greek yogurt

1/3 cup uncooked oats

1/3 cup almond milk

1 tablespoon peanut butter

about 1-2 tablespoons of chia seeds

I like to add vanilla slices and pumpkin pie spice to mine, but cinnamon and honey are good too! You can get creative 🙂

5-6 Sliced strawberries

• Mix together

• Refrigerate overnight

• Enjoy in the morning! Some people top it with more fruit, nuts, cereal, etc. Whatevah you want.

Sunday (no) Run day

Happy Sunday!

I really think sundays have become my favorite day of the week. (Besides Saturday, let’s be honest.) When I was in college I dreeeeaded Sundays because it meant I had to face the reality that I had been neglecting all weekend to go have fun, but now that I have a full time job and no homework, I really love Sunday! There are usually 3 main things I get done: laundry, dishes, food prep for the week, and nail painting. Typically followed by an early(ish) bedtime to get a good head start on the week. 

Question: Do you have routine “Sunday things”? 

Today is a little different from my typical Sunday because I spent the first half driving back from Cleveland. I drove up yesterday to sightsee in the city and go to an Indians game. The weather was awwwwful when we first arrived, but it shaped up to be a pretty nice day!

Today: 

Once I arrived home around noon, I was ready for lunch! I made tuna salad with chopped cherry tomatoes, pickles (since I didn’t have relish), and a tablespoon of light fat free mayonnaise. I dipped Special K multigrain crackers in it. (Im obsessed with juuuust about anything Special K. I dip these crackers in just about anything. Mostly because sticking my hand in a tub of hummus isn’t exactly socially acceptable.)

IMG_7787I also had a low fat graham cracker, topped with crunchy peanut butter, pear & honey. My sweet tooth can never be satisfied!

Workout:

I didn’t have time to go to the gym today with all the errands and things I had to do, so I did this quick, sweaty little workout! I’m almost positive I saved this from one of my favorite blogs, pbfingers.com. She posts lots of great workouts and motivation! I definitely advise checking her blog out! The workout was perfect, got my heartbeat going & broke a sweat.

I found this inspirational print on Instagram this morning, and was really moved by it. (Plus it is gooorgeeeous.) I feel like sometimes life gets so stressful and hectic that it gets easy to lose sight of what is truly important, so this is a good reminder. Just some Sunday motivation for you 🙂

First Post!

Welcome to Ice Cream for Breakfast! My blog featuring all things delicious, cooking, fitness & healthy lifestyles. I have been tossing around the idea of starting my very own blog for quite some time now, and today I decided is the perfect day to finally get on it!

Though I am not a personal trainer or dietician, I truly find joy in living an active lifestyle and eating well. I love cooking and baking healthy food, but I also love to treat myself! (hence my blog name, Ice Cream for Breakfast 😉 )

Cooking (well, mostly eating…) has also become something I am passionate about. I am a complete foodie who gets excited about little dumb things like when there’s a new episode of Chopped on, or when my grocery store suddenly decides to carry a new type of cheese. You know, that type of thing. (Nerd Alert)

I am a graphic designer, so do not be shocked if I post design-nerdy, pretty typography posters, or links to designy things like that. (Like the ice cream print above. Which also happens to be the background on my iPhone. Told you — nerdy.) I just can never get enough of that stuff! (That’s passion right there, huh?)
